La Pomarrosa Yellow Geisha is the first release in our new category, curiosity. This has been created to showcase some unique projects and limited lots. It is a refined expression of washed Yellow Geisha from Colasay, Peru, produced by the exceptionally talented Merci Fernández. With only 180 kg available, this limited release marks our first-ever Yellow Geisha secured from Merci after three years of collaboration.
THE PRODUCER
Merci Fernández is an educated agricultural producer and experienced cupper at Origin Coffee Lab, bringing scientific knowledge and a keen attention to detail into every lot she produces. Grown under certified organic practices at La Pomarrosa, the farm integrates agroforestry and innovative "fruta madura" processing to enhance both sustainability and flavour precision. Her dedication to quality and innovation has made her one of Peru's most talented coffee producers.
THE PROCESS
The Washed "Fruta Madura" process at La Pomarrosa involves:
- 🍒 Fruta Madura Selection — Only perfectly ripe cherries selected
- 🔧 De-Pulping — Mechanical removal of skin and mucilage
- 💧 Fermentation — Controlled wet fermentation
- 🚿 Washing — Thorough washing to ensure cleanliness
- ☀️ Drying — Careful drying to optimal moisture content
This innovative processing enhances both sustainability and flavour precision, creating exceptional clarity.

An elegant and articulate profile revealing the refined character of Yellow Geisha. White flowers, orange blossom, sweet lemon, and stone fruit carried by complex acidity, a light silky body, and a beautifully smooth mouthfeel. A limited release showcasing the exceptional talent of Merci Fernández.

What is the roast recency?
Prolog doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Prolog typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
