INTRO

Finca Morales is a 6-hectare family farm located in Nuevo Belén, Lonya Grande, Amazonas. Its name refers to the abundance of wild blackberries in the area. There was a lasting impression with Robier when Federico and Mikołaj visited in August of 2025 and this particular extended fermentation washed coffee was carefully processed with a lot of time and attention. The result is a well-balanced, round cup with notes of chocolate, plum and soft floral character.

Roiber Elit Becerra Fernández operates a 6-hectare family farm in Nuevo Belén, an area known for its abundance of wild blackberries (reflected in the farm's name "Morales"). His dedication to quality and careful attention to processing techniques has created a lasting impression, demonstrating exceptional skill in extended fermentation methods.


THE PROCESS

The Extended Fermentation Washed process at Finca Morales involves:

What is the roast recency?

 

Prolog doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Prolog typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
