Six years of collaboration with Finca El Paraíso in Nariño have brought Prolog a deep understanding of what this landscape can produce. The farm's highest plots — those José Ignacio Gómez López has named Altos del Paraíso — sit at 2,000 metres above sea level and offer a cup character so distinct that they're treated as a separate micro-terroir in their own right.
This honey-processed Caturra delivers a beautifully structured and sweet cup, with red apple brightness, ripe cherry depth, and the warmth of honey running through to a floral finish. It is a coffee that speaks clearly of its altitude and of the care invested at every stage.
THE PRODUCER
José Ignacio Gómez López is a co-owner of Procaal and one of the leading figures in Nariño's specialty coffee movement. His approach to farming is progressive and holistic — coffee grows alongside citrus and avocado to promote biodiversity and resilience across the farm, whilst a custom-built solar dryer enables natural light and controlled airflow to ensure precise, energy-efficient drying.
Beyond his own farm, José plays an active role in supporting fellow producers through the Cooperativa de Cafés Especiales de Nariño, helping others access international specialty markets. Every cherry at Finca El Paraíso is hand-picked by skilled harvesters, ensuring exceptional quality whilst sustaining meaningful livelihoods across the community.
Prolog's most recent visit to José, in August of last year, only deepened a relationship built on trust, shared values, and a genuine passion for outstanding coffee. The Altos del Paraíso plots represent the pinnacle of that collaboration.
THE PROCESS
The Honey process at Altos del Paraíso involves:
- 🍒 Selective Harvesting — Only fully ripe cherries are hand-picked from the highest plots of the farm
- 🔧 Depulping — Cherries are depulped with a portion of the mucilage intentionally left on the seed
- ☀️ Solar Drying — Coffee is dried on raised beds under a custom solar dryer, allowing natural light and airflow for controlled, even drying
- 📅 Extended Rest — Sufficient resting time ensures stabilisation and clarity of flavour before milling
- ✅ Quality Control — Lots from the Altos del Paraíso micro-terroir are separated and assessed independently of the main farm production
