It's becoming the season of sidras, and this Sidra Prime is our latest addition. Sidra Prime is ripe with tart pineapple and berries and is a very clean, classic washed flavour profile. Producer Maria Rodríguez spearheads this community-driven coffee, the flagship sidra variety offering from an association of neighbouring farms called "Núcleo de Gestión de Palestina".
THE PRODUCER
Long-time Prodigal customers may remember our San Gabriel SL-28 from a couple years ago, another lovely coffee from Maria and Finca Betania. Maria Rodríguez spearheads this community-driven coffee initiative, bringing together an association of neighbouring farms committed to producing exceptional specialty coffee.
This association of producers works closely with our green coffee vendor, InConexus, on advanced training in processing methods and farm management. Through collaborative learning and shared resources, the association demonstrates how community-driven quality initiatives can elevate coffee production across an entire region.
THE PROCESS
The Washed process for Sidra Prime involves:
- 🍒 Cherry Selection — Careful picking at peak ripeness
- 🔧 De-Pulping — Mechanical removal of skin and mucilage
- ⏱️ Brief Fermentation — Short fermentation for super clean flavour profile
- 🚿 Washing — Thorough washing in clean water
- 🏠 Roof Drying — Approximately 20 days on roofs
This brief fermentation creates a super clean flavour profile characteristic of classic washed processing.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
What does 'Filter' or 'Espresso' Roast mean?
Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Prodigal coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
