This marks one of our first listings from the Cusco region of Peru, where altitude and shade from native pacay trees create outstanding conditions for specialty production.


THE PRODUCER

Justino Huamán farms a property called Finca Limonniyoc, situated at 2100 metres in the Cusco region of Peru. The farm has been growing typica and bourbon varieties for fifteen years, with Geisha cultivation a more recent addition over the last five years.

The farm's drying area benefits from natural shade provided by pacay and other native trees. True to Andean tradition, Justino relies on pack animals to transport harvested coffee down from his mountain perch — a journey that takes two to three hours. This level of commitment to the land reflects the care that carries through to the cup.


THE PROCESS

The Washed process at Finca Limonniyoc involves:

  • 🍒 Cherry Selective Picking — Only ripe cherries are harvested by hand
  • 🔧 Pulping — Cherries depulped, leaving part of the mucilage intact
  • 🧪 Brief Fermentation — A short fermentation stage to loosen remaining mucilage
  • 💧 Washing — Thoroughly washed to remove fermented mucilage
  • ☀️ Raised Bed Drying — Dried on raised beds over 15–20 days under natural shade
