INTRO
It's been a while since we've had a pure pink bourbon on the menu, and we are stoked that Erick Bravo's El Chaferote is how we beat the drought. This is our second offering from the Bravo family farm. This coffee just landed in the roastery less than a week ago and it's cupping beautifully. We love the glimmering flavours of grapefruit, pear, and soft honeysuckle.
THE PRODUCER
Erick manages the specialty side of his father's farm. Just a few hectares are devoted to coffee production, but this small but mighty farm went on to win 3rd place at the 2019 Colombian Cup of Excellence. The Bravo family's dedication to quality and meticulous processing has established Finca El Chaferote as a reliable source of exceptional specialty coffee.
The farm's Cup of Excellence success demonstrates the potential of small-scale, quality-focused production—proving that even farms of just a few hectares can produce competition-winning coffees through careful management and innovative processing techniques.
THE PROCESS
The Washed process at Finca El Chaferote involves:
- 🍒 Cherry Selection — Careful picking at peak ripeness
- 🔧 De-Pulping — Mechanical removal of skin and mucilage
- 💧 Fermentation — Controlled wet fermentation
- 🚿 Washing — Thorough washing in clean water
- ⛺ Canopy Drying — Dried under canopies
This super clean processing creates a fabulous presentation of the pink bourbon variety.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
What does 'Filter' or 'Espresso' Roast mean?
Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Prodigal coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
