Each plot brings its own micro-climate and varietal expression — Betania focuses on classic Huila varieties including Caturra and Tabi, whilst El Diviso is home to his newer SL28 programme.

His commitment to quality has yielded extraordinary results on the competition circuit, including multiple Cup of Excellence placements with his Pink Bourbon and Gesha lots. His mother, Teresa de Jesus, is a co-steward of the family's legacy, and Linarco famously drops everything when she calls.

THE PROCESS

The Anaerobic Washed process at Finca Betania involves:

  • 🍒 Selective Harvest — Only fully ripe cherries are hand-picked, with strict colour selection throughout the harvest period
  • Cherry Rest — Ripe cherries rest sealed in containers before depulping, allowing an initial anaerobic fermentation that builds aromatic intensity
  • 🔧 Depulping — Cherries are pulped to remove the outer skin, exposing the mucilage-coated parchment
  • 💧 Washed Fermentation — Parchment ferments in water for an extended period to develop acidity and clean up residual mucilage
