Paola Trujillo has become one of the standout names on the Mirra menu over the past year, with previous releases of aji, sidra, wush wush, and pink bourbon already confirming her status as one of Colombiaβs most exciting producers. Now, Mirra presents her washed SL28 β a variety they had been searching for from the right hands, and Paolaβs proven track record of outstanding quality means this lot is everything they hoped it would be. In the cup: freshly-squeezed lime acidity in abundance, juicy and bright red currant and berries, and the crisp, sweet snap of cameo apple.
THE PRODUCER
Paola and her sister Patricia are the second generation to steward Patio Bonito, a nine-hectare farm in the coastal region of Cauca, Colombia, founded by their father Carlos Trujillo β an agronomist and coffee farmer with over 40 years of experience. Carlos has gradually been transferring authority over the farm to his daughters, who have absorbed his deep knowledge of cultivation and agroforestry whilst bringing their own energy and ambition to each harvest.
Patio Bonito is planted with over 45,000 coffee trees across a remarkable diversity of varietals β castillo, typica, colombia, pink bourbon, sidra, wush wush, SL28, geisha, and aji β and sits at 1,700 MASL. The farmβs altitude, combined with Caucaβs distinctive terroir, creates ideal conditions for producing coffees of exceptional clarity and complexity.
THE PROCESS
The Washed process at Patio Bonito involves:
- π Harvest β Careful hand-selection of cherries at peak ripeness
- β Sorting β Floating to remove defects and underdeveloped fruit
- π§ Depulping β Mechanical removal of the cherry skin
- π§ͺ Fermentation β Controlled fermentation to develop acidity and complexity
- π§ Washing β Clean washing to remove all residual mucilage
- βοΈ Drying β Raised-bed drying to preserve brightness and crispness
