High in Arbegona at around 2400 metres, the Muntasha family farms in conditions that feel almost extreme. The air is thinner, the temperatures cooler, and everything moves a little slower. When we spent time there, we could feel how much patience this altitude demands.

Their natural process is careful and intentional. Nothing rushed, nothing forced. The cherries dry slowly, building energy and clarity at the same time. The Muntasha family farms in conditions that feel almost extreme—the air is thinner, the temperatures cooler, and everything moves a little slower at 2400 metres.

When we spent time there, we could feel how much patience this altitude demands. The family's approach reflects this environment—careful, intentional, and built on the understanding that quality at this elevation requires time and dedication.

THE CUP

Orange, berries, bright citrus and tropical yellow fruit. Vibrant and expressive, but never chaotic. There is brightness, but also balance. It carries the feeling of that high land—quiet, focused, and full of potential. Cherries dried slowly at 2400 metres, building energy and clarity at the same time.

What is the roast recency?

Mazelab doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Ilse typically roast towards a developed medium-light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
