INTRO

Potosi is owned by siblings Rigoberto and Luis Eduardo Herrera, third-generation coffee producers from Café Granja La Esperanza. After Juan Antonio Herrera and his wife Blanca Ligia Correa purchased the land with existing Typica plants, they added Red Bourbon, Yellow Bourbon, and Caturra — and Café Granja La Esperanza began.


THE PRODUCER

When Rigoberto and Luis took over the family operation in the late '90s, they pivoted the farms to organic production. They've done major renovations during 30 years of ownership, planting exotic varieties throughout the 52 producing hectares. At Potosi, they produce classic Colombian varieties like Caturra, Colombia, and Tabi, as well as exotics such as Geisha, Sidra, San Juan, Mandela, and SL28.


THE PROCESS

The XO Natural process at Finca Potosi involves:

  • 🍒 Selective Harvest — Only the ripest San Juan cherries selected
  • 🧫 Extended Fermentation — Prolonged natural fermentation developing complex flavours
  • ☀️ Whole Cherry Drying — Dried with fruit intact to develop boozy, tropical notes
  • 📅 Aging — Extended resting period like fine spirits

The XO designation reflects the extended aging and fermentation process, creating rum-like, aged characteristics in the cup.


THE CUP

An intensely complex cup with rich rum-like boozy notes, bright tropical pineapple, and subtle oak wood character. The XO natural process creates exceptional depth and sweetness.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6–12 weeks.
