This Gesha from the Hartmann family's Finca Mi Finquita showcases the delicate, floral elegance that has made Panamanian Gesha legendary. The cup delivers jasmine florals, apricot sweetness, and Meyer lemon brightnessβa refined, ethereal profile amplified by an ultralight roast that preserves every nuance. Grown between 1,650 and 2,000 metres above sea level in the bird-rich rainforest of Los Pozos, this lot comes from one of Panama's pioneering specialty coffee families, who most recently won the Best of Panama 2022 competition.
THE PRODUCER
The Hartmann family are pioneers of Panamanian specialty coffee. Their story begins with Alois Hartmann, who settled in Panama in 1912. His son, Ratibor, established Finca Hartmann with 100 hectares of virgin rainforest he inherited from his father. Today, the land is shared by Ratibor's five children. As it ascends the mountain, the farm has been divided into many tablons (plots), with Gesha planted on most of them. The rainforest has been preserved with the coffee grown under the shade of the canopy, and the family continues to plant native trees to ensure the ecosystem's health. The land is famous for bird watching, with around 300 species recorded, and their coffee carries Bird Friendly certification.
THE PROCESS
This lot undergoes classic washed processing to highlight Gesha's delicate characteristics:

- πͺ De-Pulped β Skin removed on day of harvest
- π¬ Fermentation β Controlled mucilage removal
- πΏ Washed β Thoroughly cleaned in fresh water
- βοΈ Dried β Careful drying preserves delicate aromatics

THE ROAST
This coffee receives an ultralight roast and has been rested to allow flavours to develop fully. The gentle roast preserves the delicate jasmine aromatics and bright acidity whilst developing sweetness and clarity. Resting allows the coffee to stabilise, creating a more refined and integrated cup.
THE CUP
Delicate and ethereal with jasmine florals, apricot sweetness, and Meyer lemon brightness. A refined expression of world-renowned Panamanian Gesha.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
What does 'Filter' or 'Espresso' Roast mean?
Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Manhattan coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
