This is Datura's final Ethiopian release of the season, before the new crop arrives. A clean profile with vibrant, high acidity that holds from hot to cold.


THE PRODUCER

Elto Coffee is the vision of Eliyas Dukamo and Atiklit Dejene, a couple from Sidama Bensa driven by a deep passion for coffee. Their project, Elto, is dedicated to showcasing the full richness of Ethiopian terroirs through exclusive nano-lots of remarkable clarity and complexity.

Working hand in hand with smallholder farmers from surrounding communities, they carefully select the ripest cherries and transform them with a rare precision, blending traditional knowledge with contemporary innovation. Each lot is treated as a canvas, where processing methods like washed, natural, and honey are reimagined to highlight the singular expression of Sidama's terroir.

What makes Elto unique is not only the meticulous attention to detail, but also a philosophy rooted in long-term partnerships, traceability, and a vision for a better coffee world.


THE PROCESS

The Washed process at Elto Coffee involves:

  • 🍒 Selection — Careful selection of the ripest cherries
  • 🔧 Depulping — Mechanical removal of cherry skin
  • 💧 Fermentation — Controlled fermentation to remove mucilage
  • 💧 Washing — Thorough washing to ensure cleanliness
  • ☀️ Drying — Careful drying on raised beds

The washed process highlights the clarity and terroir expression of Sidama's finest varietals.


THE CUP

A clean profile with vibrant, high acidity that holds from hot to cold. It opens on a bright lemon attack, fresh and zesty, finishing on white florals and stone fruits. A juicy texture, with a hint of white tea adding structure to the cup.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
