A lot acquired in its entirety and offered with full exclusivity. From Colombia to France, this coffee crossed the ocean aboard a sailing vessel, ensuring a low-impact and carefully managed journey. This coffee offers a beautiful crisp cup, defined by bright acidity and a silky body. It opens with green notes of lime and lemongrass, leading into a subtle violet-like floral character. The cup is vibrant and juicy, with a clean, refined finish.


THE PRODUCER

Pedro Fabian operates El Porvenir farm in Tambo, located in the Cauca region of southwestern Colombia. A land shaped by history and altitude, Cauca has long played a central role in the country's development. Marked by dramatic volcanic landscapes, the region benefits from deep, fertile volcanic soils. These conditions, combined with the high altitude of 2,100 metres, create an ideal environment for growing exceptional coffees. Pedro Fabian's dedication to quality and careful cultivation practices allow the terroir to express itself fully in the cup.


THE PROCESS

The Washed process involves careful handling to achieve clarity and brightness:

We recommend brewing with beans that areΒ at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
