A remarkably clean Gesha from Panama's highlands, showcasing exceptional florality and elegance. This lot was processed using Bambito Estate's signature double-washed method for maximum clarity.


THE PRODUCER

Bambito Estate, led by Priscilla Gonzalez, sits in the volcanic highlands of Panama's Volcán region at elevations between 1660 and 1800 metres. The farm has become renowned for its meticulous approach to quality, with particular focus on Gesha production.

The high altitude and volcanic soils create ideal conditions for growing exceptional coffee, with cool temperatures extending the cherry maturation period and developing complex flavours.


THE PROCESS

The Double Washed process at Bambito Estate involves:

  • 🍒 Harvest — Selection of uniformly ripe cherries
  • 🔧 Depulping — Mechanical removal of cherry skin
  • 💧 First Wash — Initial washing to remove most mucilage
  • 💧 Soak — 15-hour soak in clean water
  • 💧 Second Wash — Final wash for complete mucilage removal
  • ☀️ Drying — Careful drying on raised beds

This second wash allows any remaining residues to dissolve naturally, enhancing clarity and precision in the cup.


THE CUP

A remarkably clean profile, highly floral, with an elegant vegetal touch. This is a style Datura truly loves—pure terroir expression without excess fermentation or heaviness.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
