THE PRODUCER
Ivan Solis farms Finca Voo at between 1,960 and 2,000 MASL in Tarrazú — one of the highest and most prestigious growing regions in Costa Rica. The extreme altitude slows cherry development, concentrating sugars and building the structural complexity that makes Tarrazú coffees so sought after internationally.
Costa Rica has long been known for its meticulous post-harvest processing, and Finca Voo exemplifies this tradition. THE PROCESS
The Natural process at Finca Voo involves:
- 🍒 Selective Harvest — Ripe Red Catuai cherries hand-picked at full maturity
- ✅ Sorting — Cherries floated and sorted to remove defects before drying
- ☀️ Raised Bed Drying — Whole cherries dried slowly on raised beds at high altitude, allowing fruit sugars to concentrate and infuse the bean
- 📅 Extended Resting — Careful monitoring of moisture content throughout the drying period to achieve consistency
