Lollipop is a delicious and fun coffee from Finca Zarza in Colombia's Bruselas region. The advanced fermentation process โ a double anaerobic followed by washing โ creates a very sweet and fruity cup that's reminiscent of a lollipop with raspberry, pink gummies and vanilla tasting notes. This is specialty coffee at its most playful and expressive.
THE PRODUCER
Finca Zarza is located in Bruselas, Huila, at an altitude of approximately 1800 metres above sea level. The farm has become known for its experimental processing techniques, working closely with specialty roasters like DAK to push the boundaries of what Colombian coffee can taste like. The Wush Wush variety โ an Ethiopian landrace that has found a new home in Colombia โ brings inherent complexity and floral character that's enhanced by careful processing.
THE PROCESS
The Advanced Fermentation Washed process at Finca Zarza involves:
- ๐ Selective Harvest โ Only perfectly ripe cherries are selected
- ๐งช First Anaerobic Fermentation โ Whole cherries undergo initial anaerobic fermentation in sealed tanks
- ๐ง Depulping โ Cherries are mechanically depulped after the first fermentation
- ๐งช Second Anaerobic Fermentation โ Depulped beans undergo a second controlled anaerobic fermentation
- ๐ง Washing โ Coffee is thoroughly washed to remove all fermentation residue
- โ๏ธ Drying โ Beans are carefully dried to optimal moisture content
This double anaerobic approach develops intense sweetness and fruit character whilst the final wash ensures clarity and clean cup quality.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
