INTRO

Part of April's Sustainable Profile project, this coffee comes from El Socorro, a farm known for its consistent quality and exceptional stability. Diego de la Cerda is a third-generation farmer who has held the reins at the farm for the last 15 years, during which the number of varietals on offer has increased and the production methods have become more consistent and unique.


THE PRODUCER

El Socorro has placed highly over consecutive years in the Guatemalan Cup of Excellence competitions. In 2023, Diego placed first and second at the Cup of Excellence with his lots of Washed Gesha. El Socorro produces fantastically clean washed processed coffees, utilising hot water following the milling process to accelerate the fermentation.

Diego believes that reducing the fermentation time maintains the optimal density of the bean, leading to greater cup quality.


WHAT IS THE SUSTAINABLE PROFILE PROJECT?

The 'House Coffee' series by April, also known as their 'Sustainable Profile' Coffee. The idea is to grow together with partner producers that April already purchases smaller lots from. Importantly, the farmer sets the price they want for the green coffee based on their own valuation, giving them a more predictable revenue structure.

This symbiotic relationship between the farmer and April means the farmer gets a consistent and predictable income, and April gets consistent and predictable coffee all year round.


THE CUP

A rich and sweet cup with nutty macadamia notes complemented by refreshing honeydew melon sweetness. The medium roast profile creates a balanced, approachable coffee that works beautifully for both espresso and filter.

Flavour Notes

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans.
